What Creates the Variety?
Two main factors determine a tea's final character: its "terroir" and its processing.

Terroir This is the complete natural environment where the tea is grown, including the soil, climate, and topography. This is why, for example, a green tea from China tastes so different from a green tea from Japan.

Classification (Oxidation) The primary difference between tea types is the level of oxidation the leaves undergo after being picked. Oxidation is a natural process that changes the leaves' flavor and color.

White Tea: The least processed. The leaves are simply withered and dried, resulting in minimal oxidation.

Green Tea: Quickly heated (steamed or pan-fired) to stop oxidation, preserving the fresh, green character.

Oolong Tea: Partially oxidized, falling anywhere between a green and a black tea. This category has an incredible range.

Black Tea: Fully oxidized. The leaves are allowed to darken completely, creating the deep color and robust flavors.
